You will need:

30g Raisins
175-250ml Lavender Earl Grey Tea (I buy mine from Alexander Teas but Twinings also do it)
225g Self Raising Flour
175g Demerara Sugar
1 Large Egg

Oven 160’c

Make a strong cup of Lavender Earl Grey Tea, roughly 175ml – 250ml. Pop the raisins in a pan with most of the tea and simmer for about 20 mins , keep adding tea when needed, you don’t want it to evaporate otherwise the raisins will stick to the pan and burn.

Measure the rest of the ingredients and pop into a bowl. When the raisins look like they’ve soaked up plenty of tea (they go a lighter brown) add to the mixture with any tea that’s in the pan. Mix well. You may need to add more tea if the mixture is dry. Otherwise you should have a nice thick sticky mixture. Line a 1 and a 1/2lb loaf tin, transfer the mixture and bake for 50-60 mins. When the skewer comes out clean it is done. Pierce the loaf all over (but not too much that it looks ugly) And generously drizzle with honey. Leave to cool. Serve with a knob of butter.
