Have you felt it? Autumn is here 🍂 The night’s are colder, the air is crisp and the days are becoming shorter.

 

I love the change of season! I find it liberates and helps us set new intentions for the coming months.

 

Sometimes it can be hard to adjust to the change of season and I think it is important to keep our mind and body nourished.

I have been enjoying setting my guests up for the day with breakfasts packed to the brim with goodness.

 

Breakfast Jar Ideas

Fill half your jar with Chai Seeds, Add 1 tbsp of Acai Powder, add 1 Sliced Fig or half a punnet of Blueberries. Top with Almond Milk and Shake. Pop in the Fridge for 2+ hours or over night.

 

Dice 1 Apple, pop it in a pan with a tsp of cinnamon, top with water, simmer until the apples are soft and the water has evaporated. Put the stewed apples in the jar, top 3/4 of the way with gluten free oats, fill to the top with Almond Milk. Put in the fridge for 2+ hours or over night.

 

Once I have sent my guests on their way I make myself a yummy tummy warming and easy to prepare lunch.

Quick Miso Soup Lunch 

1.5 Litres of Water

2 Good Quality Veg Stock Cubes (Bouillon is a bit too salty)

3 Tbsp Miso Paste

Knob of Ginger chopped

4 Cloves Garlic

200g Sugar Snap Peas chopped

2 Handfuls of washed Bean sprouts

1 Handful Buckwheat Noodles

Tofu, Boiled Eggs or other Protein

Good Grind of Pepper

Boil the Water and Vegetable Stock in a Pan. When the cubes have dissolved add the Miso Paste. When the paste has dissolved add the Noodles, simmer until they are a minute away from being cooked. Add the rest of the ingredients with a good grind of Pepper and boil for a minute. Add your choice of Tofu, Eggs or other Protein.

(This should make enough for 2 lunches)
